I always like granola bars. I don’t know about you, but I get SO sick of store-bought granola bars. Plus, the last box I bought tasted stale and they weren’t even expired.

Sometimes, it’s so convenient to just grab a box at the store, but homemade granola bars really are so easy to make. You probably already have most of these ingredients on hand and in just a few short minutes,ย  you can have homemade WAY BETTER than store-bought granola bars.

The flavor possibilities are endless. Today, I was feeling like peanut butter and chocolate chip. I love the combination of all these flavors, they blend together perfectly and leave you with a super delicious, very soft and chewy granola bar. Just how I like them.

No-Bake Peanut Butter and Chocolate Chip Granola Bars

A delicious super soft and chewy homemade granola bar that doesn't require any baking!
Prep Time: 25 minutes
cool time: 2 hours
Total Time: 2 hours 25 minutes
Servings: 10 granola bars

Ingredients 

Instructions 

  • Combine 2 cups quick oats and 1 cup Rice Krispies cereal in a medium bowl and set aside.
  • Add 2 tablespoons coconut oil, ยผ cup honey, and ยผ cup packed light brown sugar to a small saucepan and stir to combine. Bring to a boil over medium heat then turn off the heat and add ยผ cup creamy or chunky peanut butter and 1 teaspoons vanilla extract. Mix until smooth.
  • Pour over the oat mixture and stir until evenly combined. It might not seem like there isn't enough liquid, but keep stirring and it will come together.
  • Pour it into a greased 8 x 8 x 2-inch pan. Sprinkle 2 tablespoons mini chocolate chips on top and gently press them into the oat mixture.
  • Allow the bars to cool completely and set for at least 2 hours before cutting them into 10 bars. Wrap individual bars in plastic wrap, or store them in an airtight container for up to 5 days at room temperature.

    Super tasty! I let the bars harden in the fridge and I also added shredded coconut. I often find that homemade granola bars fall apart but these stay together very well.

  2. Can you taste the coconut from the coconut oil? If so, can you think of anything I can substitute with? Thanks! Sounds wonderful.

    1. Usually with coconut oil you can’t taste the coconut in it. It does add more flavor and just a healthier way of making these bars. Hope that helps and you enjoy these bars!! XOXO
